An Organic and Fair Trade co-op called San Ignacio Rio Amoju grows this coffee where the Amazon River begins.

Notes: Site, sound and smell are your tools. Take notes on EVERY roast and compare. If you want to truly harness the craft of roasting excel in this before relying on apps and software.

Light: about 20-25 seconds after 1st cracks end

Medium: on my roasts I stop just before the second cracks start(maybe a snap or two in and you’re in good shape for a nice medium coffee). I use this option for a well balanced crowd pleaser coffee.

Dark: Once those 2nd cracks start…. hit the timer and let it go for 40-60 seconds more. You’ll soon hear the cracks rolling like rice crispies when you pour milk on them. That’s the sound you want. It’s up to you to decide where you want to end your roast when your in the rolling second cracks. Enjoy the boldness! Great for espresso blends.
